[Sticky] Cheesy Scones

Lovely served buttered, warm from the oven with your favourite soup.

Cheesy Scones

Ingredients:
250g Self Raising Flour
60g Butter
Pinch salt
125g strong cheddar
1/2tsp mustard powder
1 egg
160ml milk

Method: Number of Servings: 12 scones / Prep Time 10 Minutes / Cook Time 15 Minutes

Cost for 12 scones – £1.55

1. Add the flour, butter and salt into a large bowl, rub together until the mixture looks like breadcrumbs.
2. Grate the cheese and add to the bowl, along with the mustard powder, mix all together.
3. Add the egg to the milk and whisk with a fork.
4. Make a well in the centre of your mixture and pour in the milk/egg, a little at a time as you may not need all of it. Mix together until you get a dough like consistency and all the ingredients come together but is not too sticky.
5. Sprinkle your work surface with a little flour and roll out the mixture until about 2cm thick, use a pastry cutter of your choice or even a glass if you don’t have any cutters.
6. Gather any bits of dough and re-roll and cut until all the dough has been used up.
7. Pop the scones onto a greased baking tray, brush the tops with a little milk and a sprinkle of extra cheese. You should get about 12 scones depending on the size of your cutter.
8. Bake at 200C for about 10 to 15 mins until they are risen and a nice golden colour.
