Ingredients:
500g cooked beetroot
400g can chickpeas (drained, weight approximately 230g)
1 clove of garlic
1 tsp ground cumin
1 tsp ground coriander
1 tsp extra virgin olive oil
1 tsp lemon juice
Method: Number of Servings 10 (75g) / Prep Time 10 minutes
1. Place all ingredients* into either a bowl (and use a stick blender) or a jug blender
2. Blitz well, making sure there is still a bit of texture
3. Season with salt and pepper
4. Garnish with fresh mint and serve with vegetable crudités or with a feta salad
*Optional: add a handful of fresh mint
