You thought that Mayo was hard to make.......this recipe is delicious and so easy


Ingrediants:
175 g butter
175 ml extra virgin oil olive
2 egg yolks
2 tsp garlic puree
1 tsp Dijon mustard
Salt & pepper to taste
Method:
1. Melt the butter in the microwave or in a small pan. Pour into a jug and let cool slightly
2. Add the extra virgin olive oil to the melted butter and set aside
3. Mix together the egg yolks, garlic puree and mustard in a large bowl with a spoon or hand whisk
4. Drizzle in the butter/olive oil mixture very slowly while beating with a hand mixer
5. Keep beating until the mayonnaise turns thick
6. Season with salt and black pepper
7. Store in an airtight jar in the fridge
Notes for different varieties:
– For chilli mayonnaise add a few drops of Tabasco sauce or chilli powder
– Remove the garlic and add more mustard
