[Sticky] Chicken Curry with Chapati

This delicious dish is perfect for a curry inspired night in!

Chicken Curry with Chapati

Serves 3

Curry Ingredients:

50g coconut oil
2 chicken fillets – cut into chunks
1 onion (chopped)
6 garlic cloves (crushed)
1 large tomato (chopped)
1 red pepper (chopped)
1 green pepper (chopped)
1 yellow pepper (chopped)
Spices (cumin, gram marsala, curry powder, ginger, paprika, coriander)
250ml stock (made with meat juices)
250ml double cream
Salt & pepper

Chapati Ingredients:

FiberFlour 100g
Yeast 2g (optional)
Olive Oil 5g
Salt 3g
Water 75ml

Curry Method: Prep Time 15 Minutes – Cook Time 45 Minutes

1. Melt oil in the pan
2. Fry onions until soft
3. Add chicken and garlic and fry until cooked
4. Add Tomatoes and spice mix and fry for a few minutes
5. Add peppers until soft
6. Season to taste
7. Add cream and stock, stir and simmer on low heat until thick (approx 30 mins)

Chapati Method: Prep Time 15 Minutes / Cook Time 5 Minutes

1. Put flour and salt into a food processor.
2. Add water turn on at low speed. Trickle in some olive oil.
3. The dough will come together into a ball quickly ~20-30 seconds.
4. Roll into balls of about ~30g on a board dusted with flour.
5. Flatten the balls using your hand and then a rolling pin making sure to keep the area sufficiently dusted with flour to prevent sticking.
6. Cooked on a very hot plate for around 60 seconds each side.

Made Chapattis only and came out very authentic.
Another comfort food in a healthy format.
I used Soya Flour and they came out great
