A light lunch that tastes great hot or cold!

Ingredients:
1 boneless half salmon side
50g parmesan (grated)
25g breadcrumbs
2 tbsp lemon juice
2 tbsp extra virgin olive oil
10g fresh parsley
20g fresh dill
10g fresh coriander
Method: Number of Servings 6 / Prep Time 10 minutes – Cook Time 30 minutes
1. Preheat the oven to 190C
2. Finely chop the fresh herbs and combine with the lemon juice and olive oil
3. Place the salmon in a baking tray and cover in herb mixture
4. Combine the breadcrumbs and parmesan and sprinkle on top of the salmon. Cover with tin foil
5. Bake for 20 minutes then remove foil and bake for a further 10 minutes (or until bread crumbs crisp up)
6. Serve either hot or cold
