[Sticky] Almond Cake

Try our delicious almond cake by our superstar office baker (a.k.a Helen, Operations Manager)!

Almond Cake

Ingredients:

175g butter
150g fibre sugar (or you could use xylitol/erythritol)
4 large eggs
125g ground almonds
70g ultra fine fibre flour
1tsp almond extract
flaked almonds to decorate

 

Method: Number of Servings 8 / Prep Time 15 Minutes – Cook Time 1 Hour

1. Beat the butter and sugar together until light and creamy (I melted the butter slightly and used an electric whisk)

2. Continue whisking and add the eggs one at a time

3. Fold in the ground almonds, flour and almond extract

4. Put into a greased and lined deep 7 inch cake tin

5. Sprinkle the flaked almonds on top

6. Bake for approx. 1 hour at 170C/150C Fan/Gas Mark 4, until nicely brown on top and a skewer comes out clean

7. Cool completely on a wire rack, best served cold

  • 30g fat
  • 358 kcals

  • 0.13g salt

What is fibre sugar and fibre flour? I’m in the U.K.

Good morning

Fibre sugar and fibre flour are lower carb alternatives to standard flour and sugar. They can be purchased via Amazon or directly from the manufacturer Lonjevity Foods.

The ultra fine fibre flour is especially good for cakes, biscuits and pastry.
