This is such an easy and tasty recipe, combine all the ingredients in one tray and that’s it!!

Chicken and Lentil Tray Bake

Ingredients:
200g red lentils (washed)
400g can chopped tomatoes (use the flavoured ones if you wish)
2 tsp ground cumin
1tsp turmeric
1 chicken stock cube, made up to 400ml
1kg chicken drumsticks
Optional – if you like more heat add some chopped red chilies, if you like it a little sweeter add 2x tablespoons of sultanas or drizzle with sweet chili sauce

Method: Number of Servings 4 / Prep Time 5 Minutes, Cook Time 1 Hour

Cost per serving – approx. £0.70 (without any optional extras or veg)

1. Set the oven to gas 6/200C/fan 180C

2. Add the lentils, tomatoes, spices, stock and your optional ingredients if you wish, into a large baking tray and stir

3. Add the chicken drumsticks and stir again to cover with the juices. Cover with foil and place in the oven for 30 mins

4. After 30 minutes remove the foil and increase the heat to gas 7/220C/fan 200C. Cook for a further 20 to 30 mins until the chicken starts to look golden brown.

5. Serve with veg of your choice, to make it super easy I used frozen mixed veg. Or if you prefer crusty white bread.

  • 7g Fat
  • 30g Protein
  • 232 Kcals

Do you keep the skin on the drumsticks before cooking?

You can either leave the skin on or take off depending on what dietary approach you are following, I personally like to leave it on.

I don't see why not, just ensure you take it out of your freezer and leave to defrost before warming up. Many thanks - X-PERT Health
