These Thai-inspired turkey meatballs make a colourful and satisfying meal that’s full of flavour. They’re also quick and simple enough for a midweek dinner.

Lean turkey provides plenty of protein. Ginger, garlic, lime and Thai red curry paste add a fresh, aromatic flavour. Coconut milk creates a rich and creamy sauce, while red pepper and sugar-snap peas add colour and crunch.

Each serving provides 36g of protein, 16g of carbohydrate and 3g of fibre. You can easily make the whole meal lower in carbohydrate too. Try serving the meatballs with cauliflower rice, courgette noodles or extra non-starchy vegetables instead of rice or noodles.

You only need one pan to make this recipe, so there’s less washing up afterwards. At around £2.46 per serving, it’s also a great option when you want something tasty and a little different without spending too much.

Make it your own

This recipe is easy to adapt to suit your tastes. Add more vegetables, use more or less curry paste depending on how much heat you enjoy, or finish the dish with fresh coriander and a squeeze of lime.
